Yesterday I ate an expire beff jerky stick which expire in July 5.2008...?

Is anything wrong will happen to me?

No, you will be fine, if it expired July 5, 2006 or 7 then I would be concerned, but you should be just fine.

Probably not. I used ot work for a supplement company and they would always last a lot longer then the expiration date. Most companies will shorten the actual expiration date so the stuff you get is freshest. Plus with all the preservatives in beef jerky I am surprised they would expire at all.

The expiration dates are set conservatively on purpose.  The manufacturers want the stores to sell the stock quickly, so it stays fresh.  And they set the date so that maybe only 5% of a batch all made at the same time would be stale at worst by that time.  Pharmaceutical companies do the same thing with drugs.  The military wanted assurances that the drugs they had in stock would be effective in the field, so the manufacturers tested the stuff every month or so until 5% showed signs of breaking down.  That became the cutoff date.
