  1. you know, you can actually  buy some at costco. try looking there, that's where i got my bulgogi and stuff :] look in the refrigerated section etc.

  2. I am a former chef and love Korean food, Ibuy alot of things here in Toronto Canada from my Korean grocery store, we have a very large Korean community here, and what your reffering to are called "Panchan" or little bite in Korean.

I love them all from the pickled ones, the spicy kimchee-d items, salty fish flavoured ones and the fresh ones, as for my favs well kimchee of any kind, the pickled leek like you said, daikon either with the dark sauce or in the yellow pickle, the perrilla leaves in oil and vinegar, and the salty greens.

I have them with my Bim-bee-bap, Pork bone soup, Bul-go-ghi or a pork and tofu hotpot stew. As for making them you can get special korean chili pastes and preparation for the making of panchan, if you do not have a place in town, I can give you a website that sells the ingredients to have them shipped your way.
