Yummy chocolate recipes?

Does anyone have any recipes that use cocoa powder instead of chocolate? Can be anything, muffins, slice, biscuits, etc.

I've got cocoa, peanuts, coconut, almonds, condensed milk, plus all the other baking staples like eggs, flour, etc... Doesn't have to contain all those, it's just what I got.

  1. Applesauce Cocoa Cookies::

    1/2 cup shortening

    1 egg, beaten

    1/3 cup unsweetened cocoa powder

    1/2 teaspoon salt

    1/4 cup water

    1 teaspoon baking powder

    1/3 cup granulated artificial sweetener

    2 cups cake flour

    1/2 teaspoon ground cinnamon

    1/2 teaspoon baking soda

    1 cup unsweetened applesauce

    Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

    Cream together shortening and sugar replacement. Add egg and blend well.

    Sift all dry ingredients together and add alternately with applesauce and water to creamed mixture. Be sure to add flour first and last.

    Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 degrees F for 12-15 minutes.

    Cinnamon Cocoa Drops::

    2 egg whites

    1/2 cup almonds, chopped

    1 tablespoon ground cinnamon

    1/2 cup white sugar

    1 teaspoon cocoa

    Set oven to 300 degrees F (150 degrees C). Grease cookie sheets.

    Whip egg whites until stiff. Add almonds, cocoa, cinnamon and sugar and stir to just blend.

    Drop by spoonfuls on cookie sheets and bake for 20 minutes, or until dry.

    Cocoa Apple Cake::

    3 eggs

    2 cups white sugar

    1 cup butter, softened

    1/2 cup water

    2 1/4 cups all-purpose flour

    2 tablespoons cocoa

    1 teaspoon baking soda

    1 teaspoon ground cinnamon

    1 teaspoon ground allspice

    1/2 cup semisweet chocolate chips

    2 cups grated apple

    1 tablespoon vanilla extract

    Cream together until fluffy the eggs, sugar, butter or margarine, and water.

    In another bowl, sift together the flour, cocoa, baking soda, and spices.

    Add dry ingredients to creamed mixture and mix well.

    Fold in chocolate chips, apple, and vanilla extract. Stir until these ingredients are evenly distributed.

    Spoon into greased, floured 10 inch bundt or loose bottom tube pan.

    Bake at 325 degrees F (165 degrees C) for 60 to 70 minutes until cake tests done.

    1/2 cup butter

    1 cup white sugar

    2 eggs

    1 teaspoon vanilla extract

    1/3 cup unsweetened cocoa powder

    1/2 cup all-purpose flour

    1/4 teaspoon salt

    1/4 teaspoon baking powder

      

    3 tablespoons butter, softened

    3 tablespoons unsweetened cocoa powder

    1 tablespoon honey

    1 teaspoon vanilla extract

    1 cup confectioners' sugar

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

    In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.

    Bake in preheated oven for 25 to 30 minutes. Do not overcook.

    To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

  3. Here's a recipe for no bake cookies that I like:

    NO BAKE CHOCOLATE-OATMEAL COOKIES

    1/4 c. butter

    4 tbsp. cocoa

    2 c. sugar

    3 c. oats

    1/2 c. milk

    1 tsp. vanilla

    Mix together all ingredients except oats and vanilla. Let boil for 3 minutes. Add vanilla and oats. Mix rapidly and drop by tablespoons onto waxed paper. Let cool.

    If you type No bake cookies into a search there are a lot of different recipes.  Most of them use peanut butter as well.  I like this one better though.  Really quick and easy and even kids can help.

  4. Hot Fudge Pudding Cake

    During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

    1 cup Bisquick or biscuit/pancake mix

    1 cup sugar

    3 tablespoons plus 1/3 cup of unsweetened cocoa powder

    1/2 cup milk

    1 tsp vanilla

    1 2/3 cup hot water

    Powdered sugar (optional)

    Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.        

    Homemade Chocolate Cream Pudding

    1 to 1 1/2 cup sugar

    1/4 cup cornstarch

    1/2 cup cocoa

    dash salt

    4 cups milk

    4 egg yolks, slightly beaten

    4 teaspoons vanilla

    1/4 cup butter, softened (for vanilla pudding only)

    Combine sugar, cornstarch, cocoa, and salt in 2-quart saucepan.

    Combine milk and egg yolks, then gradually stir into the dry ingredients.

    Cook over medium heat, stirring constantly, until mixture comes to a boil. Continue to boil for one minute, stirring constantly.

    Remove from heat, and stir in butter and vanilla. Pour pudding into four serving dishes, and chill.

    Servings: 8 - 1/2 cup

    Chocolate Raspberry Brownies

    12 servings

    1 1/2 cups sugar

    3/4 cup unsweetened cocoa powder

    1 cup fat-free egg substitutes

    1 10 oz. jar sugar-free raspberry preserves, or apricot, or cherry)

    1 teaspoon vanilla

    1/2 teaspoon salt

    1/2 teaspoon baking soda

    1/4 teaspoon almond extract

    1 cup flour

    Thoroughly coat a 9x13 inch pan with nonstick cooking spray and dust with flour. With an electric mixer, combine sugar and cocoa. Gradually pour in egg substitutes and raspberry jam, beating on low-speed until sugar is no longer grainy. Add vanilla, salt, and almond extract and beat briefly to mix. Combine flour and baking soda and stir in with a flexible rubber spatula. Do not over mix. Turn into prepared pan. Bake in preheated 325-degree oven 30-35 minutes. Brownies should be slightly underbaked but not runny in the center. Allow to cool and cut into 2x2" squares.

    2 egg whites

    1/8 teaspoon salt

    1/2 cup sugar

    1/2 teaspoon vanilla

    1 tablespoon unsweetened cocoa

    1/2 cup lowfat ricotta cheese

    4 ounces lowfat cream cheese

    1/3 cup unsweetened cocoa

    1/2 cup powdered sugar

    1/8 teaspoon grated orange zest

    1 tablespoon orange juice

    1 12 oz. can mandarin orange sections, drained

    Heat oven to 275. Line cookie sheet with parchment paper or brown paper. In small bowl combine egg whites and salt. Beat until foamy. Gradually add sugar and vanilla, beating until stiff peaks form. Sift 1 tbs. cocoa over egg whites and fold into mixture. Using 1/4 cup of meringue, drop 6 individual mounds onto paper-lined cookie sheet. Spread each into 4" circles with a deep well in the center (forming cups). Bake at 275 degrees for 45 minutes or until dry. Turn oven off and leave in closed oven for 1 hour. Remove from oven and cool completely. Just before serving, combine all filling ingredients except orange segments in food processor. Process until smooth. Spoon mixture evenly into meringues. Top with orange segments. Drizzle with warm hot fudge topping if desired.

    1 1/4 cups chocolate graham cracker crumbs

    3 tablespoons sugar

    1/4 cup prune puree

    3 cups nonfat milk

    2 packages instant chocolate pudding mix

    1 1/2 cups light cool whip

    Preheat oven to 375 degrees. Coat 9" pie plate with cooking spray. In large bowl mix cracker crumbs and sugar. Cut in prune puree with pastry blender until mixture resembles coarse crumbs. Press into pie plate. Bake 15 minutes then cool on rack. Pour milk into large bowl, add pudding mix and whisk 2 minutes. Gently fold in 1 cup whipped topping. Spoon in prepared shell. Chill at least 2 hours. Garnish with additional topping.
