Question:

Yummy vegetarian meals and desserts?

I'm trying to become vegetarian, but my parents aren't. I can't exactly eat something different than my parents every meal, but I cook a LOT around my house because I enjoy it and my mom gets lazy after I cook dinner 2 nights in a row :-)

So I can pretty much cook whatever I want when I get the chance. Can you give me some recipes for really yummy vegetarian meals (and desserts!!!!!!) that both me and my parents will like? I'm not going vegan so milk and eggs and all that's ok, but don't give me any recipes with fake meat, because fake meat is disgusting to me...

and some tips on how to live vegetarian with a non-vegetarian family?????

Lol, I know of this great tasting sandwich.^ ^ You just take some cheese, pickles, lettuce, any sauce (or in my opinion none), potato chips (regular is best ^_~), and some toasted whole wheat bread. It's not much but it's good. I was also wanting to know if you could maybe talk a while about a question of mine you answered?     Or you can try my own spinach, tomato and carrot pasta recipe.  I make it for dinner sometimes & my whole family who are omni loved it.

    Ingredients:

    1 bag pasta

    1 bunch spinach

    onion

    garlic

    canned tomato

    coriander

    basil

    mixed herbs

    cracked pepper

    salt

    method:

    1 boil the pasta and drain when cooked.

    2 chop up carrots, onion, spinach and herbs

    3 saute the onion with some olive oil. add the large can of tomatoes, herbs, garlic, cracked pepper & salt. Cook on stove top for a few minutes.

    4 put all the pasta in a large oven tray, add spinach, carrots & sauce.

    5 cover with foil and cook in the oven for 20 minutes.

    You can add vegetarian cheese too if you like

    *Dessert*

    Here’s a great vegan brownie recipe:

    Preheat oven to 350F (180C)

    1 ½ cups vegan chocolate chips

    ¾ cup soy margarine

    1 ½ cups flour

    ½ cup unsweetened cocoa powder

    ½ tsp baking powder

    275g silken tofu (silken or soft tofu instead of eggs)

    1 ½ cups granulated natural cane sugar

    1 tsp vanilla

    ½ cup corn syrup

    1. in a pot combine 1 cup chocolate chips with margarine. Melt over low heat, stirring until smooth. Remove from heat and set aside

    2. in a bowl, sift together flour, cocoa powder and baking powder. Set aside.

    3. holding the tofu over a bowl or sink, gently squeeze to release excess liquid. Transfer to a blender. Add sugar and vanilla and blend until smooth.

    4. In a large bowl, combine melted chocolate with corn syrup. Add tofu mixture and mix well. Fold in flour mixture just until moistened. Add remaining ½ cup chocolate chips and fold until evenly distributed through batter.

    5. spread batter in greased pan, smoothing the top and pushing batter into the corners. Bake in preheated oven for 25 to 35 minutes or until center is firm. Let cool completely in pan on a wire rack. Cut into squares.

    Pasta nutritional yeast cheese sauce or other sauce and vegetables.

    Potatoes scalloped, mashed, fried, baked, etc with fillings and sauces.

    Burgers made with portobella mushrooms, chickpea, tofu, soy, vegetable, seitan, tvp, or tempeh.

    Sandwiches like roasted veggie, TLT, (vegan) BLT, tofurky cheezsteak, etc.

    Lasagna

    Tacos or burritos

    Nachos, pizza

    Fried or baked or bbqed tofu

    Fried eggplant or other vegetables.

    Rice or couscous or quinoa mixed with beans of your choice and vegetables.

    Stir fry wit vegetables and tofu or whatever you like.

    Risotto or other rice dish.

    Falafels in whole wheat pita with tomato, avocado, parsley, and tahini or hummus.

    Chili

    Chickpea cutlets

    Sushi

    Enchiladas

    Desserts:

    Peanut Butter Cookies!

    Ingredients (use vegan versions):

        1 1/4 cups firmly packed light brown sugar

        3/4 cup smooth peanut butter

        1/2 cup shortening/vegan soy butter mixture (1/4 cup vegan soy butter, 1/4 cup vegetable shortening)

        2 tablespoons of vanilla

        1 heaping tablespoon of unsweetened applesauce

        1 3/4 cups unbleached all-purpose flour

        3/4 teaspoon baking soda

        3/4 teaspoon salt

    Directions:

    **Note on the peanut butter and vegan soy butter: I use Smart Balance peanut butter, natural unsweetened PB may not taste good in this recipe! For margarine, I use Smart Balance Light because the flavor is great.

    Mix your brown sugar, peanut butter, margarine/shortening mixture in a large mixing bowl either by hand or with an electric mixer until smooth. Add in the applesauce, mix again.

    Next, put in your flour, vanilla, baking soda and salt. Mix until well blended.

    Take a rounded teaspoon and spoon onto a cookie sheet (I put wax paper over what I am cooking on) and use a fork, pressing once on each side of the cookie to get the nice fork lines in it.

    Bake at 375 degrees Fahrenheit for 8 to 10 minutes, depending on your oven. Be careful not to overbake.

    It is important to let them cool for several minutes before attempting to take off of the sheet, it gives them time to harden.

    Chocolate Peanut Butter Banana Brownies

    Ingredients (use vegan versions):

        1 cup flour

        1/2 teaspoon baking soda

        1/2 teaspoon baking powder

        1/4 teaspoon salt

        1 cup sugar

        1 mashed banana

        1/2 cup peanut butter (room temp.

        1 oz. melted baking chocolate

        1/4 cup soy milk

    Directions:

    1) Mix the flour, baking soda, baking powder and salt in a large bowl.

    2) In another bowl, mix the banana and sugar. Add the Peanut Butter and melted chocolate.

    3) mix flour mixture into sugar mixture, adding the

    soy milk a little at a time.

    4) pour into a greased/floured 8"x8" pan. Mixture

    will be very thick, so you may need to spread it

    out a bit.

    5) bake at 375 degrees F for 25-30 minutes or

    until done.
