Zucchini and Squash recepies?

I have a Zucchini and Squash and I would like to cook something easy with them. I have a simple recipe but, I don't know if I peel them like a potato or just cut.

  1. it really depends on your taste.. I like the skin on them...

    I usually just steam it for a few minutes with a little butter and pepper.  

    Or add tomatoes to them.  with some oregano.

    EASY ZUCCHINI CASSEROLE

    1 lb. zucchini, sliced

    2 tbsp. olive oil

    1 med. sized onion, chopped

    1/2 c. canned tomatoes

    1/2 tsp. salt

    1/2 tsp. pepper

    2 tbsp. parsley, chopped

    1/3 c. bread crumbs

    2 tbsp. Parmesan cheese, grated

    1/2 tsp. basil

    1/4 tsp. oregano

    Saute onion and zucchini in olive oil for several minutes. Add balance of ingredients. Mix thoroughly and transfer to 1 1/2 quart casserole. Bake at 350 degrees for 35-40 minutes. Serves 4.

    EASY ZUCCHINI & VEGETABLES IN A

    SKILLET

    2 or 3 tbsp. olive oil

    1 med. onion, sliced

    1 med. clove garlic, minced

    1 tsp. thyme

    1/4 tsp. oregano

    1 to 1 1/2 c. water or veg. broth

    2 c. sm. broccoli florets

    1 1/2 c. sm. cauliflower florets

    3 c. coarsely chopped cabbage

    2 c. thinly sliced zucchini

    1 lg. tomato, peeled & chopped (including juice)

    2 tbsp. fresh minced basil

    Pepper to taste

    Heat half the olive oil in large non-stick skillet. Add onion, garlic, thyme, oregano, saute over medium high heat, stirring frequently for 2 minutes, adding a few tablespoons of water or broth to prevent scorching. Add broccoli, cauliflower to skillet and continue sauteing, stirring constantly, adding water or broth, 1/4 cup as needed to keep vegetables moist, allow to cook through.

    Saute until vegetables turn bright color about 3 minutes. Stir in cabbage, zucchini, chopped tomato with juice and rest of olive oil. Continue sauteing vegetables constantly. Add fresh basil and water or broth if needed to keep vegetables moist. Saute extra 5 minutes until tender. Season with pepper. Serves 4 to 6.

    EASY PASTA PRIMA VERA

    1/4 c. butter

    1 c. snow peas

    1 sm. zucchini

    2 sm. carrots

    1 sm. summer squash

    1/2 pt. heavy cream

    Parmesan cheese

    1 lb. cooked fettucini

    Salt

    Pepper

    Julienne zucchini, summer squash and carrots. Trim ends from snow peas. Melt butter in large fry pan. Saute vegetables over low heat in butter for 5 minutes. Do not overcook. Add cream and simmer until slightly thickened. Toss with fettucini. Add freshly grated Parmesan, salt and pepper to taste.

    EASY RATATOUILLE

    1 eggplant, sliced thinly

    2 green peppers, sliced

    2-3 onions, sliced

    Fresh or canned tomatoes, or tomato sauce

    3-5 diced carrots

    1 or 2 zucchini or summer squash

    Canned or fresh mushrooms

    Clove of garlic

    In a wok or frying pan, sizzle garlic in small amount of cooking oil. Begin sauteing peppers and onions. Carrots, eggplant, mushrooms, and squash next. Tomatoes at the end. Add any spices you wish with oil and garlic. Serve with brown or white rice. Can add cooked shrimp or chicken for a complete meal.

  3. No need to peel.....just wash well and dry, then slice in rounds about 1/4-1/2 inch thick.....they are wonderful sauteed with a little garlic and sliced onion in a little butter, or olive oil......very tasty.

  4. I love squash and zucchini.  Yes I always peel them.  I love to make stir fry with lots of zucchin and squash.
