Zucchini bread tastes bitter!?

i just made a zucchini/cheese bread & it tastes awfully bitter!!! why????

  1. i think when zucchini is overcooked goes bitter or if you left the seeds of the zucchini in that could have caused it aswell


  2. if the raw zukes taste bitter, baking them into bread won't help.  try peeling the zukes... if still bitter, w/o skin pitch it all.

  3. Old zucchinis taste bitter.  Buy the freshest you can find and then don't store them too long before using them.

  4. Did you use olive oil?

    So the Zucchini's may be old and seedy( were they soft)?

    Or the olive oil is rancid( that's why I asked).

  5. What else did you put in it? Zucchini is a mild tasting squash..now if it was really old it might get bitter. What kind of cheese? The oil you used could have been rancid too so smell it.When I make Z. bread I make a sweet version that's moist & delicious.

  6. I am confused I have never heard of making Zucchini bread with cheese and I never bake with olive oil.

    this could be a multitude of things

    If your Zucchini was large they get bitter with size

    did you peel it and rinse it with cool water

    did you use to much leavening products,  baking soda, baking powder

    was your flour fresh

    how long was it baked

    there are a lot of variables
