  1. You are correct 'was' is the correct answer as in this sentence 'was watching' is used to describe what Jack is doing.  


  2. it should be 'were' unless there are commas in it like this:

    "Jack,along with Matt and Debbie, was watching the setting sun."

    "Jack, Matt and Debbie were ..." would be better.

    "Jack, with Matt and Debbie was...." is not quite so good, but shifts emphasis onto Jack if that is the required effect. the along part of the sentence is totally redundant and very poor grammar.

  5. It should be "was" because Jack is the subject.  Matt and Debbie are just part of the prepositional phrase.
