    I don't think it is metaphorical, just very clever word play. A horse came in from outside the town to run in a local steeple chase race  and had a doubtful/dangerous reputation. The owners convinced the local inexperienced jockey the margin of his win would be "out of sight" as in so far ahead you could not see him. The jockey got thrown at the second hurdle and was taken away by ambulance (therefore himself was "out of sight" at the finish of the race)  Written as a snapshot of life at the time. A Yarn. Could have been a tall story I guess.
