Anthropology is the study of humans really, therefore, an anthropologist study humans much in the way of a previous answer.  However, there is more to the storey.  Anthropology has 4 main subfields (and many more from these 4).  Cultural Anthropology is the study of human cultures.  This can include everything from what we eat, say, think, believe, and more.  Physical Anthropology deals more with the physical aspects of humans.  Evolution and human variation studies,  as well as forensics and primate studies are all part of this subfield.  Archaeology is the study of past cultures.  They dig up evidence of cultures that was left behind and study it.  Finally, Linguistics is the study of human languages.  Language is such a huge part of any culture, that sometimes we don't give it a lot of thought.

    From there people do study specific subfields.  I am mostly just an archaeologist and anthropologist in general.  However, some do specialize in one particular detail or another.  Some market analysts are anthropologists that study how and why certain subculture groups buy what they do.  A number of physical anthropologists go into forensics if they have the stomach for it.  I even read a book about Aztecs once that was written by a women who studied the psychology of past cultures.  It was interesting.
