can I legally posess a pocket knife and transport it with me? It's assisted opener, but folding nonetheless and the blade is 3 inches long. Obviously if authorities comment on it, I'd reply I use it for work purposes only, and not the self defense excuse.

also are there restrictions to laser pointers and paintball guns that pertain to where I can carry and how powerful they can be?

There is no blanket 'yes or no' answer to your question.  It depends on the location and situation.  Obviously you are not going to bring a paintball gun or a knife to traffic court.  A pocket knife may by considered a weapon at a public event and be confiscated.  A laser pointer could get you into trouble at an airport.

A small pocket knife is not a problem providing it's not carried in a restricted area.  Not many people use a knife at work.  If they do, it's left at work, or placed in their locker.  Laser pointers are used for one thing, pointing.  Are  you going to say you use it at work also?.  You're going to be very easy to pick out in a crowd, carrying a paint ball gun, knife, and a laser pointer.
