It's that time of year again! My lovely sister has grown enormous courgettes (or marrows!) and has asked me to cook some for a family get together. Stuffed marrow is delicious but does anyone have another suggestion? I fancy cooking something a bit different.

  1. This should work with your sister&#039;s courgettes. (Wish we were neighbors. I&#039;d love to have a few and also to know her gardening expertise.)  This is Brenda&#039;s recipe, given to me years ago and great with courgettes. Make this ahead up to almost the end. See below.

    Make a mixture of ground beef (hamburger) and minced garlic, chopped onion, and your favorite herbs. Saute the garlic, onion, salt, pepper, herbs lightly. Add the hamburger meat and stir. You don&#039;t want any big chunks, just a crumbly mixture.

    Take a large roasting pan, add 1/2 cup olive oil or vegetable oil. Heat oven to 325 degrees. Slice the courgette so you have round medallions about 1/2 inch thick.  Bake until tender but not falling apart. Watch carefully.

    Now add a slice of cheese to the courgette and a generous tablespoon of the cooked hamburger.  Top with another bit of cheese and a little piece of red pepper or tomato. Now you can cover and refrigerate.

    When it&#039;s almost time to serve, heat through in a 325 degree oven for about 15-20 minutes or until the cheese melts. Using a spatula, serve carefully so that the courgette does not break. Offer a little bowl of warmed salad dressing.


  2. If there will be a grill there - GRILL THEM! Drizzle olive oil on them and sprinkle with salt and pepper. Place on grill, turning once.


  3. I love fried courgettes! Just fry them in oil and butter. Then add some yoghurt, finely chopped garlic and some fennel. Really fresh and perfect for the summer.

  4. Zucchini Bread is very popular in the US.  It freezes well too.  Good as is, or with just butter or cream cheese on it.  It&#039;s a sweet bread, similar to Pumpkin or Banana bread

    ZUCCHINI BREAD

    3 eggs

    2 c. sugar

    1 c. oil

    2 c. peeled, grated zucchini

    3 c. flour

    1 tsp. EACH baking soda &amp; baking powder

    3 tsp. cinnamon

    1 c. chopped nuts

    Beat together eggs, sugar;  add oil and mix well.  Add zucchini and rest of ingredients.  Mix until blended well.  Bake at 350 for 1 hour in 2 well-greased loaf pans.  Let sit 15-20 min. before removing from pan
