Because of health reasons, i've been living like a vegan for a few weeks now...I can't eat any meats, and im allergic to all egg/dairy proteins.

I want to make sandwiches for a picnic, and have no idea what to put in them..

I need some ideas, something that would be tasty that everyone will enjoy..

  1. Ahh, the key word here is &quot;everyone&quot;...

    How about switching to veggie dogs or veggie burgers?  Yves and Lightlife both make a jumbo dog that is pretty good - throw it on a mulitgrain bun with all the fixin&#039;s and you&#039;re set.  Boca, Garden, and Morning Star all make vegan versions of their burgers that are pretty good.  Same advice as for the veggie dogs on fixing them up.

    It&#039;s hard to please everyone - ok, it&#039;s impossible, but if they&#039;re friends and family... never mind, there will always be a few buttheads in the group.  :)   Enjoy anyway!!

    also try a peanut butter and banana sandwich!

  4. Mushrooms. Varieties of mushrooms; shittake, portabello, white pizza-type ones, etc. Also soy-anything. Try even dressing them up with a nice sauce.

  5. My favourite sandwich is from Whole lotta Gelata...

    It&#039;s a sandwich on a Panini with an artichoke dip/spread (Not sure if that&#039;s vegan, I&#039;m a vegetarian) roasted red peppers, green peppers, red onions and mixed greens.  I had havarti cheese on it but you could always go with a soy cheese substitute.

    Tomato with a vinaigrette.

    Or both diced with some sort of vinaigrette.

    Grilled vegetables. Grill with olive oil and some spices.

    INGREDIENTS

    1/4 cup vegetable oil

    1/2 cup minced onion

    2 (8 ounce) packages tempeh

    1/2 cup minced green bell pepper

    2 cloves garlic, minced

    1/4 cup tomato sauce

    1 tablespoon Worcestershire sauce

    1 tablespoon honey

    1 tablespoon blackstrap molasses

    1/4 teaspoon cayenne pepper

    1/4 teaspoon celery seed

    1/4 teaspoon ground cumin

    1/4 teaspoon salt

    1/2 teaspoon ground coriander

    1/2 teaspoon dried thyme

    1/2 teaspoon oregano

    1/2 teaspoon paprika

    1 pinch ground black pepper

    hamburger buns

    DIRECTIONS

    Heat oil in a deep, 10-inch skillet over medium-low heat. Cook the onion in the oil until translucent. Crumble the tempeh into the skillet; cook and stir until golden brown. Add the green pepper and garlic; cook another 2 to 3 minutes. Stir in the tomato sauce, Worcestershire sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir. Simmer another 10 to 15 minutes. Spoon hot onto hamburger buns to serve.

    Vegetarian Chickpea Sandwich Filling --

    INGREDIENTS

    1 (19 ounce) can garbanzo beans, drained and rinsed

    1 stalk celery, chopped

    1/2 onion, chopped

    1 tablespoon mayonnaise

    1 tablespoon lemon juice

    1 teaspoon dried dill weed

    salt and pepper to taste

    DIRECTIONS

    Drain and rinse chickpeas. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise (to taste), lemon juice, dill, salt and pepper to taste.

  7. I like sandwiches made with soy cheese and non-egg mayonnaise (one can add lettuce and such to it). It took a while to find a soy cheese i liked, though. And hummus with non-dairy cream cheese.

    I can&#039;t think of anything that _everybody_ would be sure to enjoy, tastes differ so much.

    You could use vegan cream cheese and put cucumber on it.

    You could make sandwiches using Tofurky and veggie cheese.

    i haven&#039;t had one of those in ages and fluffernutters are heaven!!

You can make subs stuffed with all sorts of veggies.  Yves, Tofurkey, and Lightlife all make vegan deli slices.  I&#039;m a fan of Tofurkey slices.  Just read the labels; I&#039;m pretty sure they&#039;re all vegan, and they will say so on the label.  Get some mustard, some Veganaise (vegan mayo), whatever it is you like on your deli sandwiches.

    Also check out www.vegweb.com for other picnic ideas.  You&#039;ll find recipes for other goodies to make for a picnic.

    But in a pinch, a PBJ is good.  Also, you can order this stuff online called Suzanne&#039;s Ricemellow Fluff and make fluffernutters.

  14. Try making tacos with the Fantastic mixes. I know it&#039;s not a sandwich, per se, but they make great tacos.

  15. Get some whole-wheat tortillas and bring some chopped veggies and salsa:

    Mushrooms, broccoli, red onion in fine strips, tomatoes, bell peppers, cucumber. Maybe some marinated strips of tofu or seitan.

    Put some veggies in the middle of the bread, add salsa, and roll it up.

    You can shred some Veganrella (vegan soy cheese) onto it too.

  16. get a bagel, some hummus, and cucumbers, its my favorite sandwhich ever. or you could just do it on regular bread

  18. Peanut butter and jelly!  Or you could go with a tomato and mayonnaise sandwich.  I hate em&#039; but if you like tomatoes than you might like them.
