  1. This sauce is specifically known as PONZU sauce:

    INGREDIENTS:

    1/3 cup soy sauce

    1/4 cup lemon juice

    1 Tbsp. rice wine vinegar

    1/2 cup dried bonito flakes

    PREPARATION:

Boil soy sauce in a pan. Add bonito flakes in the pan and cool it. Drain the soy sauce. Mix soy sauce, vinegar, and lemon juice.  Makes 4 servings.

  2. Tempura dipping sauce is basically soy sauce, with some fish stock added to it, and served with some finely grated (almost ground to a pulp) daikon.

Daikon is a Japanese radish.  You may find them at the regular grocery store.  Wash and peel the daikon, then use a ginger grater if you have one.  Otherwise, use the finest side of a box grater.  A food processor is good too - you want to basically pulverize the daikon.

You usually serve the sauce with a small mound (like a large tablespoon's worth) of the grated dakion next to it.  The eater then stirs the daikon into the sauce if desired.

  3. It is easy to make and there are so many brands to buy    I mix all kinds of things together. soy and sesame oil . I also make other sauces: wine, brown sugar and soy sauce cooked together, then add pressed garlic and grated ginger, it lasts forever in the fridge.   There are no set  rules mix any combination you like.
